This mousse is named after a beautiful area in Southern France, the Perigord, part of the  Dordogne, that is known for its cuisine, specifically the duck and goose products and recipes.

The Mousse de Perigord, made by The Three Little Pigs reflects that cuisine as it contains duck, chicken, mushrooms, black truffles and sherry and cognac. It is free from pork meat.

Pair this mousse with a light to medium-bodied white wine with citrus and tropical flavor notes or a full-bodied dry red wine with rustic and earthy tones.​

In the winter of 1975 Three Little Pigs opened a charcuterie in Greenwich Village and named it 'Les Trois Petits Couchons', French for three little pigs, as the owners were French. From the start their pates were received with praise and they started to create more delicious products, like terrines, mousse and more pates. All their pates are made from natural ingredients, no preservatives, or fillers are added. The products are handmade in small batches, using traditional recipes.


Ingredients:duck skin, chicken liver, cream, eggs, milk, turkey liver, chicken, mushrooms, truffles, nonfat dry milk, pineau (cognac, grape juice), sherry wine, onions, concentrated mushroom juice, salt, hydrolyzed plant protein (corn gluten, soy protein, and wheat gluten), spices, garlic, mustard. Aspic: water, kosher gelatin, cognac, glucono delta lactone, salt, concentrated mushroom juice, lemon powder, onion powder, vinegar, white pepper, xanthan gum, carrageenan, truffles, spices.
