Garrotxa, named after the county it was made, is a goat's milk cheese traditionally made from the milk of Murciana goats. This old world cheese was virtually extinct by the late 20th century, but fortunately it was revived by a local cooperative of farmers and cheesemakers. Its most distinctive characteristics is the velvety, grey-ish blue rind and ivory colored paste.
