Manchego cheese is an immensely popular Spanish cheese produced in the La Mancha region of Spain, home of Don Quixote. This Manchego is made with pasteurized sheep's milk and aged for 8 months.
At this age, Manchego is firm and slightly chewy. Its flavors are more pronounced than younger versions, but still an approachable and relatively mild cheese. This version is unctuous with flavors of olive oil and salty nuts.
The rind of this Spanish gourmet cheese has the traditional basket weave pattern pressed in the rind, from a past tradition of aging the cheese in woven baskets. This cheese is always made in Spain, from the milk of Manchega sheep.
To go traditional, serve with olives, thin slices of Serrano ham, marcona almonds and quince paste. In every day cuisine, grate or shave over salad, veggies, or make a Spanish-inspired burger or sandwich. This cheese will please almost any foodie.
