Most of us know the Emmental cheese as Swiss cheese, the cheese with the holes and indeed this is the real Swiss Emmental, not an imitation. Emmental is a semi-soft cheese, easy to slice, a pale yellow paste and a rind, that is not present on our cuts. The holes in the cheese have various sizes, and can be as big as golf balls.
A wheel of Emmental is huge wheels, and that used to be done by hand by the cheese makers. The aging process is 10-12 weeks during which the cheese develops its characteristic light fruity flavor we all love so much.
Ingredients: part skim cow's milk, cheese culture, salt, enzymes.
