Emmental cheese is commonly known as 'Swiss cheese', the cheese with the holes. Though imitators all over the world are called 'swiss cheese' this is the original: real Swiss Emmental, made in Switzerland.
Emmental is a semi-firm cheese, easy to slice, with a pale yellow paste and those iconic holes. The holes in the cheese (called 'eyes') have various sizes, and can be as big as golf balls.
This cheese is mild, lightly fruity, and vaguely nutty. It's a versatile kitchen staple to keep on-hand.
